chocolate pecan pie bars

My husband loves chocolate pecan pie.  When I found this recipe for chocolate pecan pie bars several years ago, he was happy!  These are easy to make and are a great sharing recipe.

You need:

3 cups all-purpose flour

1/2 cups white sugar (for crust)

1 teaspoon salt

1 cup butter or margarine

4 eggs

1 1/2 cups light corn syrup

1 1/2 cups white sugar (for filling)

3 Tablespoons melted butter

1 1/2 teaspoons vanilla extract

2 1/2 cups chopped pecans

1 cup melted chocolate chips

Preheat your oven to 350 and lightly grease a 10×15 jelly roll pan.

In a large bowl, stir together flour, 1/2 cup sugar, and teaspoon of salt.  Cut in 1 cup of butter with a pastry blender until the mix resembles coarse crumbs.  You could also use a food processor.

Sprinkle the mix evenly over your jelly roll pan and press to pack contents firmly.  Bake for 20 minutes.

Meanwhile, prepare the filling by mixing eggs, corn syrup, 1 1/2 cups of sugar, melted butter, and vanilla until smooth.

Stir in pecans and melted chocolate.  Pour over the prepared crust as soon as it it comes out of the oven.  Using a spatula, spread evenly taking care not to let pecans congragate in one area.  Bake for 35 minutes or until set. (check with a tooth pick)  This will take longer in some ovens.  Allow to cool completely before cutting into bars.  Enjoy with a glass of cold milk!
